Description:

This beer was one of my first batches, and is really what turned me on to brewing to be more than just a hobby. This beer similar to that of guiness but with a much less harsh after taste. (here in the states guiness isnt nearly as good in europe due to the change in process for preservation and carbonation needed here) This has great head retention for an extract beer, and is one of my favourite extract recipe, well thas about enough rambling now to get you on your way to creating this thick headed beauty. roucghly 4-5% alc by vol; 30-40 hop ibu's; yields 5 gal

Ingredients:

  • Ingrediants for a 5 Gallon Batch:
  • 6.6 lbs. Plain Dark Malt Extract (Munton Syrup is best for this)
  • 8 oz. Malto Dextrin
  • 12 oz. Crushed Crystal Malt 60L
  • 4 oz. Crushed Black Patent
  • 4 oz. Crushed Roasted Barely
  • 3 each Grain Steeping bags
  • 2 oz. Northern Brewer Hops (Boil)
  • 1/2 oz. Fuggle Hops ( Finishing)
  • 5 oz. Priming sugar (for bottling)
  • Wyeast #1028

Additional Instructions

Primary Ferment: 10 days
Secondary Ferment: 2 weeks

Procedure:

Pour 2 gallons of water into brew kettle, steep grains at 160 - 170 degrees f. for 20-30 minutes. DO NOT BOIL GRAINS!!!! Remove grain bag and allow it to drain into brew pot do not squeeze. Bring water to a boil, add malt syrup while constantly stirring as to not allow it to burn on bottom of kettle. continue until it returns to boil. Add malto dextrin, add nothern brewer hops. Make sure pot does not boil over!!! Boil for 55 minutes, then add finishing hops,boil for an additional 5-10minutes. total boil time is 60-65 minutes. Cool wort to roucghly 70 degrees add yeast.
