Weizen/Weissbier

Description:

American wheat with a hint of vanilla.

Ingredients:

  • 7 lbs. malt extract
  • 1 oz. tettnang hops
  • 1 package nottingham yeast
  • 1 1/4 lbs. american wheat grain
  • 2 vanilla beans
  • About 1 pint of cheap vodka for vanilla beans

Procedure:

Boil 1 1/2 gallons of water. bring to boil and remove from burner. Add 3/4 pound grain and 1 oz. hops. Return wort to a boil. let it boil for 30 minutes. During this time you can start to prepare the vanilla beans for there fermentation process. Cut the beans down the center and open them up. Put the beans in the bottle of vodka and let it sit until you bottle your beer. After the 30 minutes is up take out the 3/4 pound and add the remaining half pound of wheat leave the hops in and boil for another fifteen minutes. Transfer brew to the carboy and ferment for 9 days adding the yeast at 65 F. Before bottling add sugar and vanilla vodka, strain with panty hose or better. Bottle and and let sit for 14 days minimum.
