do not boil
stir honey and fill to 4.5 gallons
ferment with lavlin 1116 and 1118 until slow or dry
rack onto fruit and wait till slow or 2 weeks
rack off fruit and let clear or stabilize with potassium sorbate and sweeten if desired. probably not necessary because it will age like fine red
wait till clear rack and bottle
wait at least 2 years
