When you are ready to add the oak chips, spread them on a cookie sheet first, put them in the oven at 350F for 20 mins, then add to secondary for 7 days. For the vanilla beans, slice them in half, scoop out the inside stuff and discard, and add the beans directly for 7 days (with oak chips). This is an outstanding stout that really mellows out the longer you keep it.
