Description:

This is a very good beer. It needs to age a month after kegging - the Chinook is a little tough before - tastes like a strong IPA when young. But it mellowed quite a bit 5 weeks after I brewed it - so I guess if I did it again I would target a month for secondary and kegging.

Ingredients:

  • 8.0 oz - Biscuit Malt (23.0 SRM) (Grain)
  • 8.0 oz - Caramel/Crystal Malt - 60L (60.0 SRM) (Grain)
  • 3 lbs - Extra Light Dry Extract (3.0 SRM) (Grain)
  • 1 lbs - Candi Sugar, Clear (0.5 SRM) (Grain)
  • 0.5 oz - Chinook [13.0%] - Boil 60 min (Hops)
  • 0.2 oz - Chinook [13.0%] - Boil 45 min (Hops)
  • 0.2 oz - Chinook [13.0%] - Boil 30 min (Hops)
  • 0.5 oz - Chinook [13.0%] - Boil 15 min (Hops)
  • 3 lbs - Extra Light Dry Extract [Boil for 5 min] (3.0 SRM) (Grain)
  • 0.5 oz - Chinook [13.0%] - Boil 2 min (Hops)
  • 1 pkgs - Abbey Ale (White Labs #WLP530) (Yeast)
  • 1.0 oz - Citra [12.0%] - Dry Hop 7 days (Hops)

Additional Instructions

Boil: 60 Minutes
Primary Ferment: Until activity slows
Secondary Ferment: 1 month
