  • 5.00 gal - Denver, Colorado (Water)
  • 1 lbs - Caramel/Crystal Malt - 10L (10.0 SRM) (Grain)
  • 4.0 oz - Wheat, Torrified (1.7 SRM) (Grain)
  • 6 lbs - Wheat Liquid Extract (8.0 SRM) (Grain)
  • 0.5 oz - Cascade [5.5%] - Boil 60 min (Hops)
  • 0.5 oz - Cascade [5.5%] - Boil 30 min (Hops)
  • 1.00 cup - Lemon Juice (Boil 10 min) (Misc)
  • 1.00 oz - Lemon Zest (Boil 10 min) (Misc)
  • 1 pkgs - Hefeweizen IV Ale (White Labs #WLP380) (Yeast)

Early tastings as the wort fermented had me very concerned I had ruined it with the citrus additions. By the time it was finished secondary the citrus had mellowed nicely. Flat it was 'ok' but nothing to rave about. Kegged it and put 14 psi CO2... WOW!!! This is a nice light beer with great mouth feel and a refreshing citrus finish.

Loved the flavor of the lemon here. I also really liked how the Hefeweizen IV Ale yeast turned out in this batch.
