Beer Style: American Pale Ale  (10A)

Yield: 5 US gallons

American Pale Ale

Description:

Ale made with roasted buckwheat, and German chamomile and lavender flowers

Ingredients:

  • 1 lb Roasted Buckwheat (steeped for 30 min at 152 degrees)
  • 3 lbs Sorghum Syrup (prior to boil)
  • 1.5 oz Saaz Hops (60 min)
  • 5 tsp DAP (15 min)
  • 5 tsp Yeast Nutrient (15 min)
  • 3 tbsp Malto-dextrin (15 min)
  • 3 lbs Sorghum Syrup (5 min)
  • 1.25 lbs Brown Rice Syrup (5 min)
  • 1 oz Crystal Hops (flameout)
  • 1 oz German Chamomile Flowers - in hops bag (flameout)
  • 0.5 oz Lavender Flowers - in hops bag (flameout)
  • 1 pkg Safale US-04 Yeast
  • Secondary:
  • Add Polycar to secondary

Additional Instructions

Primary Ferment: 28 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Procedure:

Toasted buckwheat for 2 hours @ 225 degrees F.

Steep buckwheat for thirty min prior to boil.

Bring wort to boil, and primary fermentable sugars, return to boil and achieve hot break.

Add hops, finings, remaining fermentable sugars and other ingredients according to schedule.

Chill wort until appropriate temperature to pitch yeast.

Add Polycar to secondary
