Description:

Fruity & Juicy. Has a sweeter malty flavor and wasn't as close to ZD as I had hoped, but still a great beer on its own.

Ingredients:

  • 6 lbs Extra Light DME
  • 1 lb American – Munich – Light 10L
  • .5 lb German – CaraFoam
  • .5 lb American Caramel / Crystal 60L
  • .5 lb German – Melanoidin
  • 1 oz Citra – Pellet (11AA) 10 Mins left during steep
  • 1 oz Citra – Pellet (11AA) 15 Mins
  • 1 oz Citra – Pellet (11AA) 10 Mins
  • 1 oz Citra – Pellet (11AA) 05 Mins
  • 1 oz Citra – Pellet (11AA) 01 Mins
  • 3 oz Citra – Pellet (11AA) Dry Hop (start day 2 through day 7)
  • 2 pkgs Safale – English Ale S-04

Additional Instructions

Boil: 60 Minutes
Primary Ferment: 10 days
Secondary Ferment: 12 days

Procedure:

Nothing really out of the ordinary. I steeped the grains at 150 and fermented between 60 & 65 degrees. Jump started the yeast with a cup cooled wort. After 10 days I dumped trub in the conical and gave it another 12 days to clarify then bottled in 22oz bottles.
