Description:

Amber color, low hops aroma and bitterness, floral aroma, drinks like a semi sweet champagne. A delight to drink. I may try this again using Citra hops instead.

Ingredients:

  • 4.1 lbs honey
  • 3.3 lbs Wheat LME
  • 1 oz Hallertau hops
  • 2.5 oz corn sugar
  • Wyeast 4184 Sweet Mead Yeast

Additional Instructions

Boil: 60 Minutes
Primary Ferment: 7 days
Secondary Ferment: 30 days

Procedure:

Boil 2.5 gallons water. Add LME. Bring back to boil. .5 oz Hallertau hops 60 minutes. Honey and other .5 oz hops at 15 minutes.
Chill. Dilute in fermentor to 5 gallons. Rack to secondary at 10 days. Bottle with corn sugar after 30 days.
