Dark beer with mild hop bittering. More of an American Dunkelweissen than a German style. A little roasted character from the roasted barley and Chocolate Wheat malt. Medium bodied.

Yield: 5.00 US Gallons
Steep grains (including flaked wheat) in 2 gallons of water for 15 minutes at approximately 150 degrees. Rinse with 4 cups hot water. Add malt extract and hops and return to boil and boil for 60 minutes. With 15 minutes remaining add Irish Moss and Maltodextrine. Cool in water bath and then add to 3 gallons of cold water. When temperature is below 80 degrees add yeast. Ferment for 14 days at 65 - 75 degrees. Put into secondary for 5 days at refrig. temperature, keg and carbonate.
