  • 3.3 lb Special Dark Liquid Malt Extract
  • 3.3 lb Light Liquid Malt Extract
  • 1 lb Amber Dry Malt Extract
  • 6 oz. Roasted Barley
  • 8 oz. Dark Chocolate Barley
  • 8 oz. Caramel 90L
  • .5 oz Magnum Hops
  • .5 oz Cascade Hops
  • 1 packet Sasale s-04 Dry Ale Yeast

Boil: 60 Minutes
Primary Ferment: 6 days
Secondary Ferment: 21 days

Boil specialty grains in 2.5 gallons water for 20 minutes in a steeping bag. Sparge and discard.
Add liquid and dry malt extract to wort. Stir until it returns to a boil.
Add magnum hops and boil for 40 minutes.
Add cascade hops and boil for another 20 minutes.
Chill wort and put in primary fermenter. Add water to make 5 gallons.
Pitch yeast.
After 6 days rack to secondary. Sanitize whiskey soaked oak chips and add to secondary. Leave in contact with wort for 3 weeks.

Bottle and prime as normal.
