If you love ginger and I mean ginger than this is really good. Has a strong ginger and citrus flavor with citrus flavor. I have tried this several times and it always gets rave reviews.
I cut off any woody parts of the ginger then grate all the ginger I usually buy 2 1/2 pounds to yield 2 pounds grated, Juice and zest all the citrus. Heat in as large a pot that you have available 3 gallons water sugar juice ginger zest and sugar.
Heat to boil and simmer 45 minutes.
Cool and transfer to primary pitch yeast
Add water to just over 5 gallons
I let everything go in the primary for 1 week
Then I strain and transfer to secondary
After 1 - 2 weeks in secondary prime the liquid and bottle
Let set in the bottles for 2 weeks
you will have a wonderful ginger citrus drink that is refreshing and well carbonated
