A sweet strong cider.


  • 3 gallons of unfiltered cider
  • 4 lbs of honey
  • 2 lbs of brown sugar
  • 2 lbs of raw cane sugar
  • 2 medium oranges
  • One vanilla bean (whole)
  • 4 to 6 cinnamon sticks (freshly ground)
  • 1/8 to 1/4 tsp of Nutmeg

Take the 3 gallons of cider with ground up cinnamon and nutmeg and heat to 145 degrees. When cider is heated add honey and sugar until dissolved, squeeze two medium oranges, and zest 1/2 tsp into cider. Transfer the cider into carboy, let cool and then add the vanilla bean inners and added spices, then pitch yeast. Let it ferment for two weeks, then transfer and rack for 2 weeks to clear. Ready to drink in about 6 months to a year for better flavor.
