Common Cider

Description:

Amber Straw color, Dark sugar Apple flavor and aroma

Ingredients:

  • 5 gal. Unfiltered pasteurized apple cider
  • 4 lbs. dark brown sugar
  • 3 tsp. Yeast nutrient
  • 1 packet lalvin 71B-1122
  • 5 tsp. Potassium sorbate
  • 1/2 cup brown sugar

Primary Ferment: 7 days
Secondary Ferment: 4 months

Procedure:

Heat 1 gallon of cider to approx. 140 degrees "f", stir in brown sugar until dissolved. Dissolve yeast nutrient in warm cider. Add to fermentar with 4 gallons of cider and add yeast. Ferment until Gravity is at 1.000. Rack to secondary and age for 4 months. After four months rack a second time and add 5 tsp. Potassium sorbate. Off gas for one day. Then add 1 cup dark brown sugar to back sweeten. Then bottle. Enjoy right away or age. Ages very nicely.

If you feel adventurous pull 1 gallon and add 1/4 oz. cascade hop pellets for approx. 1 week. Adds a very nice hop flavor and aroma
