Christmas/Winter Specialty Spiced Beer

Description:

This is a tasty hybrid of a German Oktoberfest and Pumpkin Ale. The pumpkin and spice flavors are there, but do not over-power the natural flavors of the ale.

Ingredients:

  • 6.6 lb. Munich LME
  • 1 lb. Amber DME
  • 8 oz. Crysatl Malt
  • 4 oz. Caramel Malt
  • 4 cans Libby's Pure Pumpkin
  • 2 tsp pumpkin pie spice
  • 2 tsp vanilla extract
  • 2 oz. Fuggles hops
  • US-05 Ale yeast

Additional Instructions

Primary Ferment: 2 weeks
Secondary Ferment: 1 week

Procedure:

Steep the specialty grains at 150 degrees in 2 gallons of water for 20 minutes. Bring the water to a rolling boil. Add LME and DME and 1 oz. Fuggles hops. at T-30 minutes, add pumkin, spicesm, and vanilla. At T-10 minutes, add remaining hops. Finish a standard 60 minute boil.
