Here's an all grain recipe that scored a 41 and 43 in a recent judging. perhaps you could use a pale extract inplace of the pale malt.
Original Gravity: 1.060 @ 60 F.
Final Gravity: 1.018 @ 60 F.
Alcohol by Vol: 5.5%

Yield: 5.00 US Gallons
Mash all grains at 155F 60min, mashout 30min at 178F (this was an accident but it must of helped). Sparge to collect 14gal and boil 90min starting hops after first 30min. CF chilled into 2 7 gal glass carboys. Primary ferment 13 days and seconday glass for 15 days.
