Old Ale

Description:

A dark (mahogany), malty, complex, warm and full bodied winter warmer. Almost brandy-like. My best beer ever.

Ingredients:

  • 19 liters batch. 22.8 SRM 45.8 IBU 8.1% ABV
  • 11.7 pounds of British/English 2-row
  • 1.2 pounds of 60L crystal
  • 4.6 oz of chocolate malt
  • 1.18 pounds of Brown sugar
  • 5 oz Fuggles (3.6% aa) (60 minute boil)(39 IBU)
  • 1.75 oz Fuggles (3,6% aa)(15 minutes)(6.8 IBU)
  • S 04 yeast cake
  • Gypsum as needed
  • Irish moss at final 15 minute

Procedure:

Mash at 155-158 degrees for 45 minutes. Bring to a 90 minutes boil. Cool, aerate vigorously, and pipe onto a S 04 yeast cake. After bottling, let it age for 3 months - if you can wait. I couldn't...
