Yield: 5 US gallons
a slightly spicy herbal beer
dry berries & seeds lightly cracked, all ingredients except lime leaf & yeast brought to boil in 2L or 3L water & simmered for 30 mins, lime leaf added for last 10 mins
boiling too long or too aggressively may damage the flavors
stain into primary & top up to 10L with cool water
leave plenty of head room in primary as a lot of foam is produced during early stages
pitch yeast & leave to ferment until foam settles then rack into secondary
bottle once fermentation has finished & beer has cleared
age for at least a week before tasting
