Old Ale

Description:

Not really a strong ale, but is the closest choice available. It is really a very smooth dark ale.

Ingredients:

  • Grains:
  • 1 LB Caramel 40L
  • 1 LB Black Patent
  • 1 LB Victory
  • Malts:
  • 3 LB Plain Dark DME
  • 3 LB Dark LME
  • Hops:
  • Glacier Pellets 1oz (5.6%)
  • Cluster Pellets 1oz (7.6%)
  • Other:
  • Malto- Dextrin 2oz

Additional Instructions

Primary Ferment: 4 days
Secondary Ferment: 8 days

Original Gravity: 1.061
Final Gravity: 1.020
Alcohol by Vol: 5.37%

Procedure:

3 gallons cold water, steep grains. Warm water to 160F and steep for 30 minutes

Shut down heat and add 2 gallon of water

Add the DME and LME and stir it

Bring to rolling boil.

Add the Glacier pellets for total boil of 60 minutes

Add Malto Dextrin for total boil of 15 minutes

Add Cluster pellets for 10 minutes
Cool down to 75F, top off to 5 gallons and add yeast (I used dry Distiller's yeast)

In first fermenter for 4 days, in carboy for 8 days
