Fruit Beer


A stronger flavored ale with subtle cherry notes that are balanced with cascade hops.


  • 7 lbs. of light malt extract
  • 1 lb. of crystal malt 20L
  • .5 lb. of cara pils
  • 2 oz. cascade hops pellets
  • 1/2 Tblsp of irish moss
  • 4.5 oz. of corn sugar
  • 3 quarts of Black Cherry juice (unsweetened)
  • 1 pkg of Safale 05 dry yeast

Steep grains for 30 minutes at 155 degrees. Remove grains and add extract and 1 oz. of the hops. After 30 minutes add .5 oz. of hops. At the 45 minute mark add the irish moss. After a total of 60 minutes, remove from heat and add the last .5 oz. of hops and the cherry juice. Cool the wort to 70-75 degrees and strain or siphon into primary fermentor. Oxidize as you wish and pitch yeast packet. Ferment in primary at room temp for 1 week. Rack to secondary for another week and bottle.
