Irish Red Ale

Ingredients:

  • 8 lbs Pale Malt, Maris Otter (3.0 SRM) Grain 83.07 %
  • 1 lbs Caramel/Crystal Malt - 80L (80.0 SRM) Grain 10.38 %
  • 8.0 oz Barley, Flaked (1.7 SRM) Grain 5.19 %
  • 2.1 oz Carafa II (412.0 SRM) Grain 1.35 %
  • 1.50 oz Goldings, East Kent [5.00 %] (60 min)
  • 0.25 oz Goldings, East Kent [5.00 %] (3 min)
  • 1 Pkgs Irish Ale (White Labs #WLP004)

Additional Instructions

Primary Ferment: 10 days at 67 Degrees.

Procedure:

30 min Protein Rest Add 8.67 qt of water at 132.1 F 122.0 F
30 min Saccrification Add 7.70 qt of water at 198.3 F 155.0 F
10 min Mash Out Add 6.74 qt of water at 205.6 F 168.0 F
Mash all the grain except the Carafa II as above. Add the Carafa II at mash out and Sparge with 2 gal of water at 170 Degrees. Should add a nice red glow to the brew. Bottle finish or force carbonate your choice to 2.0. If bottle finish use 2.7 oz corn sugar and 2 cups boiling water in bottling bucket. Age for 3 weeks before drinking.

Just brewed this recipe and turned out wonderful. will brew again with a few tweaks and might become a session brew.
