Common Cider

Description:

Strong, Dry, Spiced, Warming Turbo Cider....Turbo because it's quick to get done!

Ingredients:

  • 19 Litres Apple Juice - no preservatives
  • 1 Litre Cold Stewed Tea (I used Earl Grey)
  • 2 Kilos Sugar
  • 4 Cinnamon Sticks, broken in half
  • 12 Cloves
  • 6 Allspice Berries
  • 2 Fairly large pieces of Cassia Bark
  • 1 Packet Cider Yeast or Champagne Yeast
  • Sugar to prime bottles - 2 tablespoons per each 2 Litre PET bottle

Procedure:

Put 4 litres of Apple Juice, the sugar and the spices in a large pan and make a syrup, ie don't boil!

Whilst the AJ/spice syrup is steeping put the rest of the Apple Juice and tea in your fermenting vessel.

Add the AJ/spice syrup to the fermenting vessel, stir to mix.

Pitch yeast - upto you, make a starter or not....I've done both and I didn't notice a difference in the finished product.
