Beer Style: American Pale Ale  (10A)

American Pale Ale

Description:

The beer is amber in color with a nice malty character due to the amount of crystal malt. This beer is a clone of the original recipe for Pipers Pale ale from Vancouver Island Brewery in Victoria BC.

Ingredients:

  • 10 LBS 2 ROW MALT
  • 1 1/2 LBS CRYSTAL MALT (40-60 L)
  • 1/2 OZ BLACK PATENT MALT
  • 3/4 OZ NORTHERN BREWER (60 MIN) 3/4 OZ STYRIAN GOLDINGS HOPS (10 MIN)
  • WYEAST BRITISH ALE YEAST (WLP 005)

Additional Instructions

Primary Ferment: 7 days or when you can see the surface of your bee
Secondary Ferment: 2-3 weeks or when your beer is clear

Procedure:

Add grains to 3 gal 170 degrees F water. Mash grains for 1 hour at 152 to 156 degrees F, Sparge with 3 gal 170 degree F water. Bring wort to a boil and add nothern brewer hops. Last 10 min of boil add 1 tsp Irish moss and goldings hops. Chill to 80 derees F and pitch yeast. Another method for your aroma hops is to mash hop. Add your finishing hops to your mash. I have done it a number of times and it works.
