This is a very pleasant quick mead. I brewed it as my second ever batch, and will continue to do so because of it's popularity.It has a mild hint of spices.


  • 12# Clover honey
  • 1 gallon pure apple juice
  • 2 gallons water
  • 1 vanilla bean, slightly crushed
  • 1 oz. crystallized ginger, crushed
  • 1 tsp ground cloves
  • 1 pkg. Nottingham ale yeast

Primary Ferment: 2 weeks
Secondary Ferment: 2 weeks (5 rackings)

Heat honey, apple juice,and water to a boil. As soon as it starts to boil, remove froth/impurities from top and cool. Add the rest of the ingredients except yeast. Aerate well. Put in open (sterilized) bucket - pitch yeast. Cover with a cheesecloth cover.Rouse once a day for 2 weeks, Rack to carboy secondary and add grape tannin (per manufacturers instructions). Rack a total of 5 times - two weeks apart. On 4th racking, add Isinglas for clarity. Bottle after 5th racking. Prime with 1/3 pkg 1118 wine yeast and 1/2 cup corn sugar (dissolve corn sugar in boiling water and let cool first). Ready in 4 weeks, best after a year.
