light bodied, crystal clear golden sunshine with the pleasant crispness of lemon and fragrant herbal flavor, strong, not dry, not too sweet
Bring 3 gal. good water to simmer. Stir in honey. At 190 degrees, turn off heat. Zest and chop lemons with peel and add to must with mugwort. Let stand for half hour between 180 and 190 degrees. Rack to 7 gal. carboy on top of 1 gal cool sterile water. Top to 6 gallons. Pitch yeast when slightly warm.
