Extra Special/Strong Bitter (English Pale Ale)

Description:

Smooth, dark, smokey ESB with good balance of caramel and malt sweetness, fruity esters and very slight hop bitterness.
IBU: 19
Alcohol: 6.6%

Ingredients:

  • 2 lbs Peat Smoked Malt
  • 1 lb British 120L Crystal Malt
  • 1 lb Flaked Barley
  • 4 lbs Pale Malt LME
  • 2 lbs Amber DME
  • 0.8 oz Northern Brewer 8.1%
  • 0.6 oz Yakima Goldings 4.2%
  • 0.6 Yakima Goldings 4.2%
  • Wyeast 1968 London ESB Ale

Additional Instructions

Primary Ferment: 2 weeks
Secondary Ferment: 2 - 4 weeks

Procedure:

Steep grains for half an hour.

Add LME and DME, boil wort 1 hour with following hops schedule:
60 min - Northern Brewer
30 min - Yakima Goldings
15 min - Yakima Goldings

Pitch yeast at 66F and ferment at 66F.
