Standard American Lager

Description:

a wonderful golden color, light malt flavor. nice alcohol content. good hop aroma

Ingredients:

  • 4lbs pilsner extract
  • 5 lbs pilsner malt crushed
  • 1lbs rice extract syrup
  • 1lbs honey
  • 1.5oz styrian goldings at 60min
  • 1.0oz styrian goldings at 0min
  • 1 whirlfloc tab at 15min
  • 1tsp yeast nutrient
  • 1 package wyeast budvar lager yeast

Primary Ferment: 10 days
Secondary Ferment: 14 days

Procedure:

make a yeast starter at least 24 hours before pitching
mash in 1 1/2 gallons at 170.5 F
hold mash for 45 min
mash out 3/4 gallons at 198.0
hold for 10 min
sparge with 2 gallons 170F water for 45 min
bring wort to boil turn off heat add pilsner extract and rice extract and stir very well
bring to boil add first hops for 60 min
at 15 min add whirlfloc tab, yeast nutrient, and if you have one wort chiller to sanitize
at o min add final hops and steep for 10min
cool wort to 68F
oxygenate wort
pitch yeast starter
allow signs of fermentation to begin then cool to 45-55F
ferment in primary for 10 days then rack to secondary for 14 days
rack again and crash temp to 35F for 7 days
keg and lager for 2-4 weeks or as long as you can stand
if your bottling then bottle carbonate and then lager
