Traditional Wheat Beer With That Finishes Dry With Just A Touch of Honey
My attempt at a beer my Honey will drink. She does not like dark beers.
Rice was used to lighten flavor and US-05 to keep it clean. IT WORKED.

  • 9lb Light Wheat Malt
  • 4lb Uncooked rice
  • 5lb Local Honey
  • 2oz Magnum
  • 1oz Mt Hood
  • 2 Safle US-05

Additional Instructions

Primary Ferment: 3 Weeks, Give that yeast time to clean up

This is for a 15 gal batch to the fermenter.
Bring mash water to boil and add rice, boil 10 min and add cold water to cool down to mash temp, Add all rice to mash.
Mash 60 min at 152 single step no protien rest
2oz Magnum at 60
.5oz Mt Hood at 20
.5oz Mt Hood at 10
4lb honey when chilling at 150, still warm enough to mix honey easy. Pitch yeast at 60-65 and ferment at same.
1lb honey in keg, Use one quart beer and warm just enough to mix honey and pour into keg.
