My first IPA turned out really good. A bit of sweet on the front of the tongue with a full hoppy 'bite' at the back. If this beer would have turned out a bit more clear, I would have made labels and entered it in the county fair.

Yield: 5.00 US Gallons
Add 1.5 gallons water to boil and add malt extracts, honey and the Amarillo & Centennial hops and Irish moss for a 60 minute boil. Add 1/2 oz Cascade hops for last 30 minutes of boil and add 1/2 oz Cascade hops for last ten minutes of boil. Strain into a sanitized bucket with seven pounds of ice to cool. Transfer into sanitized carboy, add water to fill to *almost* the top. Pitch yeast when temp is appropiate, When fermentation is complete, bottle.
