Beer Style: Other Smoked Beer

Recipe Type: partial mash
Yield: 5 US gallons
An Excellent smoked Porter that tastes much like Stones Smoked Porter.
Heat 6 gallons of water to 165 degrees in a large brew pot and add extract. Stir till disolved.
Place all grains lightly crushed into a stainer bag, add to brew pot and increase heat to a slow boil sirring to keep from scorching.
Boil for 1 hour.
Add 2 oz. Cascade hops 15 minutes after boil begins.
Add 1 oz. Fuggles 45 min after boil begins.
Add remaining hops and Irish moss during the final 5 minutes of boil.
Remove from heat and remove grain bag
Cold break using a wort chiller to 70-75 degrees.
Open yeast 1/2 hr prior to pitching. Pitch well shaken and warmed (Room temp) tube of yeast to carboy and add wort.
Age in primary fermentor till fermentation slows dramatically. Usually 5 to 7 days.
Secondary fermentaion for another week.
Prime with corn sugar 1 cup for bottling - 3/4 cup if kegging
