Light, floral, mildly hopped


  • Jasmine Green Tea (available at most asian markets)
  • 6 lbs Malt Extract (ditto)
  • 2 oz. Hops ( we used crystal)

Brew tea. We used 2gm per 8oz water, so 32 gm per gallon. Brew tea at 170 F for 3 min.in a grain bag and remove tea. dissolve malt to bring wort to 1.055. add 1/2 oz bittering hops at start of 60 min. boil, 1 oz at 30 min, and 1/2 oz at end. Chill. Pitch with a Dry Mead Yeast (we used Wyeast) or belgian ale yeast. When all fermentation is done, add 1/4 cup charging sugar per 1 1/2 gallons (boil sugar in 8oz water in a cup) and bottle. We made a 3.75 gallon batch.
