Vienna Lager

Description:

A German-style lager - a dark amber color, malty with a good mouthfeel, noble hop aroma.

Ingredients:

  • 0.5 lbs CaraHell
  • 5.0 lbs of dry light malt extract
  • 1.0 oz. Saaz hop pellets (60m)
  • 0.5 oz. Saaz hop pellets (15m)
  • 0.5 oz. Saaz hop pellets (1m)
  • 1 tablet Whirlfloc (15m)
  • Saflager S-23 dry yeast (Genuine Lager)

Primary Ferment: 23 days in plastic
Secondary Ferment: none

Final Gravity: 1.010

Procedure:

Steep the CaraHell at around 150-160F for twenty minutes.
Bring to boil and add DME, wait for hot break and add 1 oz Saaz hops.
Add Whirlfloc tablet and 0.5 oz. Saaz with 15m to go.
Add 0.5 oz. Saaz with 1m to go.
Cool and pitch yeast.
Ferment 7 days at 50F. 2 Days at 70F for diacetyl rest. Lager at 40 for 2 weeks or more (if you can wait that long!).
Bottle and then 2-3 weeks at room temp.
